EASY THAI PEANUT NOODLES

Ingredients:​

Noodles & Veggies:

  • Noodles of your desired amount/type (I used 1/2 a box)

  • 1 cup edamame

  • 1/2 cup cucumber, chopped

  • 1 cup shredded carrots

  • 1 red bell pepper, chopped

  • 1/4 cup cilantro, chopped

  • 1/4 cup peanuts, chopped

  • 1/4 cup purple cabbage, chopped

Peanut Sauce:

  • 1/2 cup peanut butter

  • 1/2 cup water

  • 1/4 cup soy sauce

  • 2 cloves garlic

  • 2 tbsp lime juice

  • 3 tbsp agave syrup

  • 1 tbsp sriracha

Directions: Cook your noodles according to the directions on the box. Once cooked, throw the noddles in the bowl with all of your veggies. Pour over the peanut sauce and mix it all up! Store in the refrigerator to eat throughout the week.
