SHIRAZI CHOPPED SALAD
Ingredients:
Salad:
-1 cup cucumber
-1 cup orange pepper
-1 cup tomato
-1 cup pickles
-1 cup parsley
-1 cup tofu
Dressing:
-1/3 cup extra virgin olive oil
-1/4 cup apple cider vinegar
-1 tbsp dijon mustard
-1/2 tsp salt
1/4 tsp black pepper
-1 tbsp honey
Directions: Chop up all the veggies into small pieces. Cube your tofu and saute until golden brown (I like to add pepper, garlic and turmeric for extra health benefits). Combine chopped veggies and tofu into a bowl. Mix together all dressing ingredients and pour over salad. Mix it all up and serve with love!
