EASY SUMMER TOMATO SALAD
Ingredients:
-3 cups cherry tomatoes
-1 medium red onion
-1/4 cup finely minced parsley
-1/4 cup lemon juice
-3 tbsp olive oil
-1 tsp flaky salt
-1 tsp freshly cracked pepper, to taste
Directions:
Start by slicing the cherry tomatoes in half, lengthwise. Next, thinly slice the red onion, the thinner the slices, the better. Add the tomatoes and onions into a large bowl.
Add the chopped parsley into the bowl, along with the lemon juice, olive oil, salt, and black pepper. Toss to combine and add more salt and pepper if needed. Let the salad sit on the counter for 30 minutes before serving.
