Delicious Chickpea Salad with Tofu Meal Prep
Ingredients:

For the dressing:

-1 tbsp olive oil
-1 tsp red wine vinegar
-1 tsp lemon juice
-1/2 tsp oregano
-1 tsp dijon mustard
-1 tsp garlic powder
-1/2 tsp black pepper
​
-1/2 cup chickpeas
-1/2 cup cucumber
-1/2 cup cherry tomatoes
-1/4 cup green olives
-1/2 cup tofu
-1 tbsp pickled onion
-feta, I recommend Violalife feta if you're vegan
